My gran taught me that the best measure a cook can have is her "eye" No measuring out ingredients. I taught both my sons how to make them and its now a competition who can make the best. When I met my partner of 4 years he didnt believe how good they were. Plain flour salt equal amount of milk and water 2 eggs beat until air bubbles on top of mixture. The more you beat the better it will rise as hot as oven can get before putting mixture into smoking hot fat - usually got to this stage by putting on ring dont oven oven to turn pudding for at least 10mins dont open again until cooked Foolproof method!!!!
