Kashmir Curry Center - Spital Hill - Naans

We desperately miss the Kashmir up Spital Hill. The Curries were fantastic as were the Naans.

 

But the Naans were a little bit unusual compared to your bog standard curry house.

 

Does anyone have any ideas how they made them (I'd like to recreate them on Saturday :) )

Instead of cooking them in a tandoor, the breads were oven cooked and then finished off with a flame-thrower! This made them more fluffy than most Bengali nan breads but I wondered if this was a Kashmiri style.
