Whenever I make an omelette I always use 6 eggs omitting 5 of the yolks (as that is the part with lots of cholesterol). I put the eggs in a blender with a small onion and a small amount of cheese for flavour & some black pepper and blend for about 20 seconds. It goes nice with some crinkle- cut home fries oven chips.
