It doesn't take that long to make custard that will set from scratch....about 10 minutes max....then if you pour your hot custard into a bowl which you then place into a larger bowl of cold water you can quick cool it by stirring. When it is cool enough just pour onto your (already cooked) pastry base which has some seedless raspberry jam on the bottom.....add some dessicated coconut on the top and fridge for a couple of hours.
