They probably did them by drawing pictures first, take measurements and then upscaling the diagrams by some factor onto the ground.
Yes, thats pretty much it. Theres a programme about how they do it on one of the discovery channels and they get a group of crop circle makers to show their methods and they make an incredibly intricate design in about 6 hours

How were the pyramids built and with such remarkable precision? How was so much stone hauled across miles and miles of desert? No doubt by donkey and cart or some sort of wheeled flat bed transporter hauled by hundreds of workers or slaves.... but through sand? Hard enough for even a modern 4 wheeled drive.

 

The cost in lives and bodies crippled by arduous labour must have been astounding and all to provide a tomb for some little two bit runt of a king

Probably wasn't sand at the time.
