They probably do half their revenue in one night. If they didn't 'turn' tables they would probably not be profitable, and then close. You have the option of higher prices and less covers, or more covers and lower prices. I think for what they offer it is very reasonable, so their 2hr ish limit per table, assuming they can deliver food quick enough, seems reasonable. Not that many people notice, but the actual time to consume a meal is usually around 15 minutes, which isn't that long at all once it has arrived! There used to be a restaurant in NYC that put egg timers down as you sat lol, it also had a sign that said "If you need to use your phone during lunch, you are too important to be eating lunch here"! If you were going to have to give up your table then they should have told you in advance - and if they didn't know at the time, that just proves that they can't run a busy restaurant properly.
