They would be able to tell if they searched for you, because it blocks all existence of you to them/them to you on Facebook. You can set preferences to not see cetrain people's posts us in the drop down menu on the top right of that person's post. You can do it by adding people to friendship groups too I think ie colleagues, acquaintances etc then setting the preferences for each of those groups.
