Keep a record of everything and let him know that not having the engine number on the receipt is likely to mean that a court will take a dim view of his business dealings, mentioning the police would not come amiss as long as you have someone big and strong with you at the time.

If you are not prepared to do this or similar you will have to put it down to experience and if buying anything else from a second hand car dealer or scrapper parts place make sure you have serial numbers on the receipt as well as their prited name on the paperwork.
