Not sure if you already do this but make sure they are not too big and part boil them first for 5-7 minutes. Drain and shake them in the pan to fluff them up a bit and then stick em in the oven.

 

Or you could cheat, part boil them first and then deep fry them for a while. If you don't fry them for too long you could then freeze them and bang them in the oven on the day. Alternately buy some ready frozen ones as they also cook quicker.

Must have that for 'afters' but I have tried par-boiling the roasts,  cutting them smaller but end up serving them half crispy,  Lisa Faulkner produced some nice ones but I tuned in too late to catch the details.
