It's definitely becoming more of a niche offering, and costs have shot up, but there will always be some demand for it, especially at the coast. Potato harvests in the UK have been patchy in recent years because of floods and drought, which pushes the cost up - cheap as chips is becoming an oxymoron. Not looking good for this year's harvest either because planting was delayed due to floods and a very wet winter. Never got the love for Two Steps, the batter is always soft and feels undercooked.
